Lamb chops in aromatic herbs

Inspired by the Mediterranean

For the tastiest lamb chops you have ever tasted, try this elegant but easy dish with the perfect bitter salad to complement the savory flavour of the quirky marinade.

INGREDIENTS
• 400 grams Lamb chops
• 100 grams Bitter Salad
(side dish: Red Cabbage, Endives, Chicory & Dandelion)
• 30 grams Mixed herbs
• Rosemary
• Sage
• Oregano
• Marjoram
• Fennel seed
• 6 Juniper berries
• 1 Head of garlic
• Salt
• Pepper
• Extra virgin olive oil

METHOD OF PREPARATION
• Mash the juniper berries, garlic and herb mix.
• Marinate the lamb chops for 2-3 hours.
• Sauté lamb chops and marinade in a frying pan.
• Roast in oven for 10 minutes at 180o c.
• Arrange delicately on plate with the bitter salad as a side dish.
• Season with salt, pepper and extra virgin olive oil.
