Back-to-school recipes with a global twist

You know you’ve done a great job when all of your kids’ lunch boxes come home completely empty. 

If they’re not, then you are not adding fun, fresh and interesting new flavors to your routine, suggests Katie Chin, a working mom and author of ‘Katie Chin’s Global Family Cookbook: Internationally inspired recipes your friends and family will love’.

The 224-page book journeys into her kitchen with recipe themes like Meatless Mondays, Taco Tuesdays, Pizza Night and Sliders, etc. If your picky eater enjoys only a limited number of food and find new ones overwhelming, the trick to expanding his or her flavor profile is to try introducing new ones with help from 170 delicious and healthy recipes in the cookbook.  Some highlights include Cuban Fish Tacos with Citrus Mango Slaw, Crispy Tofu with Orange Glaze, Chicken Tikka Masala Pizza, Korean Fried Chicken Sliders and etc.  

The book also contains food and flavors with multiple cultural influence such as Thai-inspired Poutine fries, Greek style nachos, Vegan Mac and Cheese as well as kid-friendly Brussels sprouts.

The working mom of 3 who admits to being a party girl, says her book is not just for day-to-day family meals but also includes celebratory meals for Greek Easter, Lunar New Year, Hanukkah and Cinco de Mayo.

Katie was recently a guest at a US TV news program KTLA-5 where she shared back-to-school hacks and recipes with viewers. Some of these include quick and stress-free ideas like using a shoe rack for snacks, making delicious overnight oats for breakfast, using cute cookie cutters for a fun lunch and more.  Click the image to watch the entire video.
