When autumn rolls around and the temperatures drop, we know it’s time to fix the family their favorite soup.

Ours is the Glass noodles or harusame soup. Harusame is a transparent type of Asian noodles made from mung beans which should not be mistaken for rice vermicelli.

Glass noodles are especially delicious with chicken, vegetables and shimeji mushrooms which give out a nutty flavor.  Try it!

You need:  (Makes 2-3 soup bowls)

2-3 chopped garlic, 1/2 onions, powdered paprika, 2 carrots thinly chopped, cooking oil, glass noodles, rock salt, pepper, sesame oil, mushrooms, 2 chicken breasts diced, shimeji mushrooms (rinsed).

How to prepare:

1.  Soak the glass noodles in hot boiling water until tender.

2. In a separate sauce pan, heat 3 tbsp cooking oil. Sauté garlic until slightly brown on medium high. Add onions and sprinkle with paprika. Mix well.

3. Add chicken, carrots and shimeji mushrooms. Stir well until slightly brown. Add 3 cups of water, cover with a lid and allow to boil.

4. When the chicken and vegetables are cooked, add the glass noodles to the mix and allow 2 more minutes to boil.

5. Turn the heat off.  Drizzle with sesame oil and serve.
