A refreshing appetizer in summer

Silken tofu, produced when pressed after the soy milk has coagulated, makes for a delicious light summer snack.

It is ready to slice and eat straight out of the fridge. Because it is customarily packed without draining, a block of silken tofu has a very high moisture content.

This velvety textured tofu is often used in stir-fries, soups and sauces. But an amazingly refreshing way most Asians eat it in summer is as an appetizer.

Here’s how to season it the Asian way –

  • Take the chilled Tofu block out of the fridge and slice. Leave it on the kitchen counter until it comes to room temperature.
  • Caramelize shallots in medium heat.
  • Cut scallions and parsley
  • In a medium size deep bowl, mix sesame oil, soy sauce, a 1/2 of sugar altogether until it is well blended. Add the oil from caramelized shallots
