This Cajun style crab cake recipe by Chef Sohan is a winner.

A lot of you may wonder whether crab cakes are generally the same as Japan style kani kureem koroke (crab cream croquettes). They’re not.

Japan style crab cream croquettes are made with a creamy white filling often blended with surimi (fake crab meat made from fish) or shrimp. Surimi is about 1/3 less of the cost of real crab meat. Crab cakes are made with large chunks of crab but cost more to prepare than croquettes.

For the Tokyo families tribe, only real crab meat gets all the love. Here’s a delicious and luxurious recipe of crab cake shared by Chef Sohan Ahluwalia. Sohan owned Bourbon Street, a New Orleans-style restaurant in Roppongi.

You will need: (for 8 crab cakes)

200 grams crab meat  ( fresh is better although canned or frozen works too)

100 grams cream cheese  100gms

1/2 cup shredded cheddar cheese

1 cup finely diced Bell peppers red, green and yellow

1 teaspoon garlic paste

4 eggs

1/2 cup milk half a cup

Lots of panko (bread crumbs)

1 tsp. mixed herbs

1 tsp. chili flakes

3 tsp. Cajun seasoning

1/2 white  pepper

1 cup flour

Preparation

  1. In a pan, melt a little amount of butter enough to sauté garlic paste and diced peppers. Sauté for five mins on medium flame. Turn off flame and set aside.
  2. In a deep glass bowl, mix together: crabmeat, cheese, the sautéed peppers, all the spices n herbs, two eggs, two large tablespoons of panko and salt to taste.
  3. Mix all of it well together. If you find the mix a bit runny, add more panko. Now cover the bowl with a plastic wrap and leave in the fridge overnight.
  4. The following day, prepare an egg bath in three flat small trays: 1) flour 2)whipped eggs with milk 3)panko
  5. Take the crab mixture out of the refrigerator and make round patties with your hands. Run them thru the three trays. Place the breaded patties in a bowl with lots of panko so that they don`t stick.
  6. Preheat your oven to 115 degrees C (240F) and keep a baking tray ready.
  7. Take a skillet and melt butter in it and fry your crab cakes till nice and golden brown.
  8. Place them on a baking tray and pop them in the oven for approximately between 8 to 10mins.

Your crab cakes are now nice and crispy. Enjoy!
