Winter calls for PHO

Not just any PHO but one that packs a punch.

Infused with aromatic spices with chewy vermicelli noodles and tender chunks of chicken, this Vietnamese Noodle Soup gives a great boost to the immune system.

Follow this simple recipe and make a delicious pot of Chicken Phở at home.

Ingredients:

Chicken wings, thighs, chicken liver

Chicken stock

vermicelli noodles

Spices – Star Anise, Cloves, Fennel seed, Cinnamon, Coriander Seed

Sea Salt

Fish sauce

Rock sugar

1 onion

1 Ginger

Chili oil

Sliced Lime

Garnishings:

  • Chopped cilantro
  • Beansprouts
  • Mint leaves

Procedure: 

  • Char grill the onion and ginger. The secret to a distinct Pho flavor lies in this process that gives your broth a subtle smokey aroma.
  • Toast the spices in a pan.
  • Make your chicken stock by putting chicken, char grilled onion, ginger and toasted spices together in a casserole. Add water and bring to a boil. Gently simmer for around an hour. 
  • Season with fish sauce, sugar and sea salt to taste.
  • Cook vermicelli noodles in a separate pot based on package’s instructions.
  • Take the chicken pieces out and shred into pieces. Set aside. Strain the soup and put in bowls. Add noodles, shredded chicken, garnishings and lime zest!
