How to make a delicious Japanese hamburger steak

Lightly dust the surface of your burger patties with flour just before cooking.

This technique helps to prevent the meat from being undercooked even on medium heat.

Heat your lightly greased steak plates well  before adding the meat. Cook for 2 minutes (on each side) on medium.

Flip the patty gently to prevent surface from cracking.

When the surface of the burger steak  becomes plump, poke the center with a toothpick. If the toothpick comes out clean, you’re good to go.

To bring out the umami of meat, serve your hamburger steak with a Japanese sauce. Here’s how to make it.

 

You will need

Soy sauce

1 tablespoon sweet sake

3 tablespoons sugar

2 tablespoons sake

3 tablespoons dashi stock

1 tablespoon minced ginger in tube

1 teaspoon Yuzu paste (or citrus paste if available)

1 tablespoon salt

chopped onion

1. Fry finely chopped onions in a skillet until color turns golden brown.

2. Combine all the ingredients with the fried onions and simmer over low heat for about 5 minutes while stirring to prevent sticking.

3.  Serve in a sauce dish.

4.  Garnish the steak with a shiso leaf and grated daikon radish.

5.  Serve with baked potato or rice.
