Grilled peppers make a delicious appetizer or a toast topping

I love roasting bell peppers in the oven with potato wedges.

Roasting brings out the sweetness and aroma that makes your grilled peppers succulent and delicious. It is necessary to cook 2 bell peppers for one person in the family because the size shrinks during cooking. 

If you prefer to make them into a salad, mix the colors to look pretty and appetizing. Not all colors taste the same. The greens are fruity and peppery with a hint of bitterness. The classic reds are soft, almost sweet and the yellows are particularly juicy. Put them in an oven dish, and bake them in a preheated oven at 200°C for around 30 minutes.

When the skin of the peppers begin to turn dark and wrinkly, take the baking dish out of the oven, and transfer them into a salad bowl. Cover it with a lid for no more than thirty minutes. This creates condensation that makes it easy to remove the skin. Slice the grilled peppers in half, remove the stems, seeds and the bitter white ribs inside.

The baked peppers are now ready for use in salads, bruchetta-style topping, or in pasta, etc.  Season with salt, pepper and drizzle with olive oil.
