Quick family meals: Spam Musubi

“Dad, could you make us Spam Musubi tonight?” my boys asked.

You don’t need to have intermediate sushi-making skills to whip up a Teriyaki Spam Musubi.  With this easy recipe you can make yourself at home!

Believe it or not, there are many fusioned dishes in Japan  from mentaiko spaghetti (spicy pollock roe with butter)  to Noodle sandwiches. Spam Musubi is that kind of food. It became increasingly popular for families to eat it as snacks or lunch.

It begins with grilling or frying slices of Spam on each side over medium heat (until slightly crispy) and then bathed in light teriyaki sauce. Using a mold the size a slice of Spam, a layer of cooked rice is pressed down over a strip of nori (cut from a  nori sheet) with a slice of Spam and scrambled egg on top of that, and then, optionally, another layer of rice. The mold is removed and the nori is wrapped over the top and around the musubi.

Serve with Japanese mayonnaise or Sriracha spicy sauce.
