Focaccia makes for a great snack.

Snacks in-between meals keep children from throwing tantrums when they’re hungry. While most kids will reach out for unhealthy snacks, the best way to manage hunger and boost their nutrition is by offering them real food. Whole grains is one of them.

Focaccia, a delicious Italian flat bread that is easy to bake, makes for a perfect snack. All you need: 455g of  flour, 335g of lukewarm water, 9g yeast, 9g of rock sea salt and 12g of extra virgin olive oil. Your choice of flour depends on your preference. If you like your focaccia dense and chewy, use hard flour. If not, stick to plain bread flour. Here’s how to do it.

Mix the flour with salt. Make a well in the middle of the flour. Add  extra virgin olive oil and lukewarm water (with yeast in it) gradually until you have a sticky dough. Sprinkle your work top with flour and tip the dough onto it. Scrape around the sides of the bowl and knead until your dough is soft which usually takes anywhere between 5 and 8 mins. Put the dough ball back into the mixing bowl and cover with a tea towel. Allow to rise for 1 hr until size has doubled.

After 1 hour, put the dough back to your work top and stretch it with your hands or a rolling pin. Cover with a tea towel and allow to rise for another 30-40 mins.

After the 2nd rise, your dough should look like this. Meanwhile, preheat your oven to 180C. Mark your dough with finger-sized holes on the surface and brush or drizzle with extra virgin olive oil and coarse salt.

 Although it’s delicious with just olive oil and salt, some people prefer to put cherry  tomatoes, herbs, black olives, or anchovies for toppings. 

Focaccia can also be eaten as a sandwich with cold meats, vegetables and various herb stuffing. Bake for 25 mins on 180C until golden. Cut into squares and presto!
