Warm up with a meaty pot of hot chili con carne

Winter can do biological changes that make us crave foods that give us warmth. These foods are usually richer than what we would otherwise eat.

A good example of a winter comfort food is a bowl of hot chili.  This Mexican style Chili con carne made with ground beef, red beans  and all the rich savory flavor of roasted garlic, onions and spicy seasoning makes for a comforting and filling dinner for the family. Whether you’re not a good cook or simply don’t have the time, just follow this easy-peasy recipe and you’re good to go.

Ingredients:

Serves a family of 4

  • 1 kg ground beef  (Nissin Supermarket sells ground beef by the kilo)
  • 2 pieces of Spanish chorizo, chopped
  • 2 pcs bay leaves
  • 2 tablespoons olive oil
  • 2 medium onions, chopped
  • 2 garlic cloves, minced
  • 3 medium red bell peppers, chopped
  • 2 teaspoons salt
  • 2 tablespoons cayenne powder
  • 1-2 teaspoons sweet paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 3 large fresh tomatoes diced
  • 3 teaspoons beef bouillon granules
  • 1 cup water
  • 1 large mug kidney beans, rinsed and drained
  • bay leaves
  • Shredded cheese
  • Nakazawa sour cream
  1. Heat oil. Saute garlic first (until brown), sprinkle some salt. Add onions. Stir in the bell peppers, paprika, cayenne, cumin, oregano. Add the thinly sliced chorizos and cook for 2-3 minutes in medium heat. Next, add tomatoes.
  2. On a separate pan, brown the beef until cooked. Then, extract all the extra fat.  Mix #1 with the meat.  Add a cup of water, bay leaves and beef bouillon cubes. Cover and simmer on medium low heat for 30-40 minutes. Add the beans.
  3. Serve with a tablespoon of sour cream on top and shredded cheddar cheese and voila!
