Tips on how to make a delicious soup for children

Your child’s interest in eating vegetables are not the same as adults.  They  have more taste buds than adults and are more sensitive to the stronger flavors.

Nutritionists say children aged two to eight years old need about 4 to 5 servings from the Vegetables and Fruit group each day.

Not all children are the same. While others have no issues with crunchy textures, the most common is kids not wanting to eat chunky pieces of vegetables.

If your children have a problem with texture and you want them not to miss the important nutrients in vegetables,  they may be more accepting of puree soups.

Pureed soups when cooked right, shouldn’t be boring. In winter, you can add a host of other flavors and aromas to your soup base to add the right depth and thickness. Look to onion, garlic, ginger, chicken or beef stock, tasty herbs, tomatoes, cumin, cinnamon, cheese, paprika, butter, cloves to make winning soups.

Thick soups are more appropriate for winter and spring. Certain vegetables will naturally give a thick soup like pumpkins and sweet potatoes, mashed plantine bananas (available at Nissin supermarket) are great examples. Grains like kidney beans, chick peas, lentils, mongo beans and even rice, are not only full of flavor, they’re packed with protein and fiber that make a healthful addition to a tasty soup.

How to cook the soup.

Cook the chopped seasonings in a spoon of butter or extra virgin oil. If you are sauteeing onions, make it long enough until slightly golden brown.

Add the beef or chicken stock and bring to a boil. Reduce heat after boiling.

Add the fresh herbs or spices, followed by vegetables.

Simmer the soup until all the vegetables are tender.

Using a portable food blender is the easiest way to do it. Just dip the blender in the pot where you’re cooking soup and voila, you’re done.You can also use a regular blender but you will need to do it in batches depending on the size of your container and amount of soup you’re cooking.

Season with salt, pepper, ginger, or garnish with parsley, parmesan cheese, chopped nuts, herbs whatever you feel like adding to the soup.
