A Delicious Salad to boost your immune system.

Although our body craves more for warm foods in winter, nutritionists will tell you that eating raw vegetables power up your immune system so it can fight off colds and flu.

Bright, bold and so healthy, these crispy and crunchy vegetables offer a huge nutritional advantage – antioxidant and anti-inflammatory benefits to the body.

What You’ll Need To Make This Salad

Ingredients (serving for 1)

  •   4 large red peppers
  • 2 mozzarella cheese,

(preferably mozzarella di bufala)

  • 4 handfuls of wild rocket lettuce
  • 4 tablespoons of  extra virgin olive oil
  • balsamic vinegar
  • freshly grounded sea salt
  • black pepper
  • half fresh fig (if available)
  • toasted slice of French bread

Preparation

1. Grill the whole peppers.

2. Cook them on all sides until charred. Remove from heat, transfer to a saucepan and put on the lid (this will help steam off the skins).

3. Let them  cool, then drain the juices into a small bowl. Scrape off and discard the charred skins.

4. Cut the peppers in half lengthwise then scrape out and discard the seed and membranes, adding any juices to the bowl.

5. For the dressing, put 2 tablespoons juice into another bowl with the olive oil. Beat with a fork. Add salt and pepper to taste, and extra pepper juice as necessary.

6. When ready to assemble the salad, cut the mozzarella apart into big shreds – about 2 pieces each – and put on a chilled plate. Add a handful of rocket and 2-3 pepper halves to each plate. Sprinkle with sea salt flakes and cracked pepper and serve.

Tip: Don‘t slather the balsamic over the salad. Use it as seasoning, not a dressing.
