Nearly every region in Japan has its own way of seasoning a bowl of  ramen but they all use these basic ingredients in making the noodle: wheat, flour, salt, water and alkaline water with potassium and sodium carbonate.

If you want to learn more about this unpretentious national soul food and explore the different taste and flavors, you won’t have to search far.

More than 110 famous ramen restaurants from all over Japan will get together under one roof to showcase their specialty.

When: October 11, 2023 (Wednesday) to November 26 (Sunday)

What:  Admission is free but a bowl of ramen is 1,000 yen (tickets only)
