Collaborative cuisine: Japanese and Thai

Too often, fusion cuisine strikes fear into even the most adventurous of palates.

But the result of the latest collaboration menu between Toriyoshi, a Japanese yakitori restaurant, and Dao Thai, known for Bangkok style izakaya, has been raved about on social media. These two have put something really exquisite together.

Both these restaurants will be serving the collaborative menu starting Feb 13, 2020 for a limited period.

Combining the elements of two culinary traditions, the foods are prepared in Thai fashion while preserving the goodness of Japanese food.

Here are the foods you should try:

■ Kao Mangai cooked in Japanese style (¥ 1,200)
Poached chicken thighs and seasoned rice cooked in iron pot.  The secret is in the dipping sauce containing hints of coriander, leeks and 11 other secret spices from Dao Thai.

 

■ Tom Yum Goong Spring rolls (¥ 680)
Special shrimp spring rolls served with Nampura fish sauce and lemon

 

■ Thai style spicy chicken (¥ 580)
Considered the ultimate snack in Thailand, this dish is made from a large quantity of chili peppers slowly fried in chili oil at a carefully controlled temperature. Unless you have a high tolerance for spicy food, better think twice.

 

Enchanted honey lemon tea pink (¥ 500) / blue (¥ 350)

■ “Anchan” Herbal tea
The tea contains  polyphenols said to be good for beauty and health. The color is produced when lemon is mixed with the tea. Anthocyanins, a type of flavonoid found in food,  gives  that purple and blue coloring as a reaction to citric acid.
