New American Chef Puts A Global Twist to Tableaux Dining

Tableaux, one of the 51 restaurants run by Global Dining Inc., has made history over the years since opening in October 1992.

The high-end fashionable restaurant that continues to attract an affluent clientele in the expat-heavy neighborhood of Daikanyama, has recently named Rachel Dow as its new Chef.

Rachel brings with her many years of experience working as sous-chef at Avec, a mediterranean restaurant in Chicago (listed in the Michelin Guide) and at American restaurant ‘The Betty’, where she was the Executive Chef.

Although the name Tableaux conjures up images of French haute cuisine, Kansas-born Rachel Dow describes the house’s theme as more of American style modern cuisine, the kind epicureans in top gourmet cities such as New York, Los Angeles and Chicago talk about.

Starting March 13, Tableaux’s new delightful dishes will be served according to its ethos: create superb dishes by blending new cooking techniques with only fresh and locally sourced ingredients. It may not pose real challenges for Rachel since Japan produces only high quality ingredients.

New American draws influences from not only French and Italian, but also Asian, Latin American, Mediterranean, and various other food cultures.

When describing the message she wanted to send with her menu, she had these three things to say:
1. “Borderless” New American is, in its essence, international cuisine
2. “Flavor first” In regards to her menu, and as a chef, she considers this to be of the utmost importance.
3. “Japanese local products” At Tableaux, we use locally sourced ingredients to bring these international flavors and authentic cooking techniques to Tokyo.
