When it’s cold outside and everyone wants their soup pronto.

As we start to feel chilly Autumn nights, many of us notice our increased feelings of cravings for nourishing and comforting soups.

Because a delicious meat stock makes all the difference, one indispensable kitchen friend we can’t live without is the pressure cooker. There’s no end to what a pressure cooker can do – from stews to comfort soups!

So in building layers of flavor, we turn to our pressure cooker for a hearty meal, one that is rich, hearty, and wonderfully delicious. This recipe will be most familiar to Vietnames. For those who haven’t tried it yet, you’re in for a truly delicious meal. As in most Asian cuisine, fish sauce helps to add umami to the soup as the casserole cooks.

Everyone will want to dive into this dish asking when dinner will be ready. Just grab a ladle and scoop out a bowlful of the most comforting soup that will satisfy the family and have everyone looking for a second helping!

Súp Nui Sườn Heo (Macaroni Pork Ribs Soup)

Ingredients:
500 grams kilo pork ribs
5 mugs of water
Chicken bouillon cubes
3-4 cloves of fresh garlic, minced
1 medium sized onion, chopped
1 tsp. sugar
fish sauce
sea salt
Garnishing:
chopped cilantros
chopped scallions

fried crispy shallots

lemon slice
Preparation:
1. Put water in a pressure cooker and bring to a boil.
2. Add ribs and simmer for 3 minutes. Turn the heat off. Skim the scum and discard. Removing the scum makes for a clear soup.
3. Take the ribs out of the pot and rinse ribs clean. Turn the heat back on and put the ribs back to the pressure cooker with water.
4. Before you close the lid, season with chicken bouillon, fish sauce, salt, sugar, fresh garlic and sweet white onion. Cook on high pressure for 5-7 mins.
5. Manually release the pressure. Stir the soup to distribute the flavours. Taste and add more fish sauce or salt as needed.
6. On a separate casserole, cook pasta according to package instructions.
7. Put the cooked macaroni in individual serving bowls and pour soup and ribs onto each bowl.
8. Garnish each bowl with chopped cilantro, & scallions. Top with fried shallots and serve!
