The Chicken meat loaf that Japanese kids love

Part of why kids in Japan prefer chicken over other meats is that it’s tender and easy to chew. They are naturally drawn to chicken nuggets, yakitori, etc. because they are cut in bite size pieces.

This popular chicken meat loaf dish called Tori no Matsutake perhaps explains why generation after generation of Japanese children consider it as one of their memorable comfort foods.

You can tell a Japanese style chicken meat loaf by the taste and garnishing. It is customarily topped with sesame seeds or poppy seeds for aroma and cut in a unique way.

Ingredients :

(Serves a family of 4)

  • 500 g.  (minced)  chicken breasts
  • 3 eggs, lightly beaten
  • 1 block silk tofu, mashed
  • 2 teaspoons minced ginger
  • 2 1/2 teaspoons sake
  • 2 1/2 tablespoons red miso paste
  • 2 1/2 teaspoons Japanese kikkoman soy sauce
  • 2 1/2 tablespoons sugar
  • 2 1/2 teaspoons cornstarch
  • 1 1/2 tablespoons sesame seeds
  • cooking oil
  • chopped scallions
  • 18-20 cm square baking pan or any oven-safe dish
  • skewers (optional)

  1. Cut chicken breasts into small pieces and grind them in a food processor until it becomes like a paste.  Set aside the sesame seeds and chopped scallions but add all the rest of the ingredients to the chicken paste. Mix well.
  2. Prepare the baking pan or any oven-safe dish and line the base and sides with greased aluminum foil.
  3. Transfer the chicken paste onto the greased pan distributing it evenly as you would a cake batter. Sprinkle with sesame seeds and chopped scallions on top.
  4. Preheat oven to 175C.
  5. Set the oven dish into a larger oven tray half-filled with water and steam baker for about 30 minutes until the center is firm. It is firm if toothpick comes out clean after pricking the center.
  6. Take the baking dish out of the oven and lift the loaf out of the pan by pulling up the sides of the foil.
  7. Cut the loaf into rectangles or fan shapes. If you are serving this outdoors, skewer onto wooden sticks for a mess-free eating.   Serve at room temperature.
