The fuss-free way to make French Crêpes at home.

Perhaps the reason the most important meal of the day is also the most neglected is – time.

Some people even skip breakfast entirely for milk or coffee as the family rush to work or school.

Unlike the traditional rice and salty fish breakfast in Japan, the French like to start the day with something sweet customarily with all of these ingredients put together: eggs, milk, bread, butter, fruits or fruit preserves. This explains why Crêpe has become the most ubiquitous breakfast staple in France.  Here’s how you can make one at home in a jiffy.

You need

250 g Flour
1/2 liter chilled fresh milk
2 tablespoons granulated sugar
4 eggs
50 g salted butter
Icing sugar as topping
fresh strawberries cut in half
vegetable oil

1 In a deep glass bowl, mix the flour with granulated sugar and salt.

2 Make a well in the middle and put eggs in the center.

3 Stir and whisk gently until thick. Add the chilled milk little by little.

4 Continue mixing until texture is smooth and fairly fluid. If it seems too thick, add a little more milk to adjust consistency. Add the cooled melted butter and mix again until lumps disappear.

5 Heat the non-stick pan lightly brushed with oil. Pour a small ladle of dough into the pan, rotate pan to evenly distribute the dough around the corners. Remember that crepes are supposed to be very thin. Put on the heat.

6 When the crêpe turns slightly brown, flip and cook the other side. Cook for about a minute.

7 Repeat. Transfer to a plate and fold. Sprinkle with icing sugar and fresh strawberries.  Makes around 5-8  crepes.

 

In France, Crepe is eaten in many ways, the most common of which is with whipped cream, fresh salted butter and icing sugar.

Although the basic dough ingredients are the same, the crepe becomes ‘galette’ when eaten with eggs, salad, vegetable, ham toppings.
