Tucked in the narrow business streets of Shiba, Minato ward, is a Cancun-style taqueria that Mexican-starved foodies will want to check out.

Modern Mexican Cabos takes its name from Los Cabos, a luxury resort area in Mexico. Opened in late 2019, it serves some of the most traditional Mexican street food in town from Tacos and Quesadillas to Tortillas and Antojitos (nibbles/snacks). This includes buffalo wings, cheese nachos, chicharon chips, fajitas and more.

Cabo’s two restaurants: one in Hamamatsucho and another in Shiba are both located in one of Tokyo’s  central business districts.

In the wake of the pandemic, Cabos had been dealt a serious blow by a succession of stay-at-home requests from the government.

“People started working from home, we had reduced business hours and we were restricted from serving alcohol,” says Umemura, the restaurant manager.

“Although the sudden transition to selling takeout has been a challenge for most restaurants, Cabos’ food menu are fortunately, easy to pack for delivery by Uber Eats,” he adds.

As of this writing, the restaurant is now open for regular business.

Cabo’s corner location, minimalistic decor and basic bar and table seatings make this a pleasant spot for a casual family lunch or dinner. It has an immaculately clean open kitchen style.

When you visit Cabo during lunch hours, order the delicious Mexican style burger and all-you-can-eat fries for 1,500 yen. (Available only at lunch hours for a limited period).

Not all burgers are created equal. When you sink your teeth into this honest-to-goodness meat bun, you experience an explosion of different winning flavors and textures. The perfectly cooked meat patty comes with generous layers of lettuce, jalapeno, guacamole, melted cheese, roasted onion, pineapple, tomato slathered in mayonnaise with chipotle (the smoke-dried version of jalapeno).

The Lunch menu which changes every month, also features a gamut of mouth-watering Mexican staples: Tacos (1,000 yen for 3 tacos), Burritos, Quesadillas (1,000 yen), Pozole Soup (1,000 yen), Enchilada (1,000 yen), Caesar Salad (1,000 yen), Chicken Alambre (1,000 yen),  a sizzling plate of chicken with chopped bacon, ham & cheese, Mexican beef steak, and Lunch of the Day.

Mexican Cabo Chef, Victor Vasquez says he can’t think of another spirit that brings out the true Mexican flavor of tacos quite like tequila or margarita.
