Ex Tokyo Restaurateur and Chef shares delicious Cajun Chicken recipe for people on quarantine.
Tokyoites who lived here in the late 90s are old enough to remember a famous place in Roppongi called Bourbon Street Louisiana Kitchen. This cozy place inspired lines around the block with delicious and authentic Cajun & Creole dishes prepared by no less than Sohan, its owner and chef.
Even after the restaurant has relocated overseas, Tokyoites still crave for his delicious Cajun style chicken recipe known as “Lose the Blues”.
In this time when people are self-quarantining at home, Sohan decided to share his well-guarded secret so people can cook it and eat well. Here it is. Enjoy!
Sohan’s “Lose the blues” chicken ( for two )
Marinade
Two chicken breasts
White wine 1cup
Wine vinegar 1tablespoon
Lemon juice 1table spoon
Grated garlic 1teaspoon
Cajun seasonings 1teaspoon
Sauce
Butter 1/2 cup
Sliced green olives 1 tablespoon
Sliced black olives 1 tablespoon
Chopped jalapeno or fresh green chili 1 teaspoon
Capers 1 teaspoon
Juice extract from 2 lemons
Finely chopped garlic 1 teaspoon
Chili flakes 1/2 teaspoon
1 red tomato, deseeded and chopped coarsely
Cooking method
1.Using a pointed knife, prick the chicken breasts randomly. Put them in a bowl and mix all the marinade ingredients. Sprinkle some salt and rub everything in with your hands. Cover with cling wrap and set aside for a couple of hours.
2. Preheat oven to 240 and get a baking dish ready.
3. Heat 2 tablespoons of olive oil in a skillet and panfry the chicken till it’s golden brown. Transfer it to a baking dish with all of the marinade liquid too. Cook in the oven for 10minutes.
4. While the chicken is roasting, take a sauce pot and put in all the ingredients of the sauce (except the lemon juice) and cook in low flame for 10 minutes.
5. Take the chicken out of the oven, adding any jus on the baking dish into the sauce pot.
6. Plate the chicken breasts.
7. Now turn up the heat on your sauce pot till it starts bubbling for half a minute. Turn off heat and add the lemon juice. Mix it well and pour over your chicken.
8. Garnish with some chopped fresh herbs. Serve with mashed/roasted/fried potatoes or grilled vegetables on the side.
