How To Make A Summer Berry Gelato with Yogurt

Soft, fluffy and so refreshing!

Blueberries abound in this healthy and fresh take on a summer favorite. A pure, clean combination of berries, cream, and yogurt with the maximum fruity flavor and none of the fat found in rich ice creams.

 

INGREDIENTS:

Blueberries 500 grams

Coconut Powder 2 tablespoons

Lime Juice 1 tablespoon

Plain Yoghurt 300 grams

Honey 2 tablespoons

Cinnamon Powder 1 pinch

Sugar 250 grams

Fresh cream 100 grams

METHOD OF PREPARATION:

1 Refrigerate fresh cream. Roast coconut powder lightly. Wash blueberries and put in strainer to remove water.

2 Blend blueberries, lime juice and sugar in mixer until it becomes puree-ish. Mix in yogurt, coconut powder, honey and cinnamon.

3 Whip fresh cream, combine with #2 and freeze.

4 Take out from the freezer from time to time and stir until it becomes ice cream quality. (Approx. 2 hours)

5 Top with blueberries or your favorite fruit.

Make this Gelato a year-round treat by adding seasonal fruit!
