Ingredients:
- 100 g butter
- 1/2 cup milk
- 2 eggs (can also be baked with 3 eggs)
- 6-10 dried dates or apricots (soaked in hot water for about 1 hour)
- 3/4 cup wheat flour
- 1/2 cup whole wheat flour (if you prefer you can use regular wheat flour instead of the whole wheat)
- 2 bananas
- 1 1/2 teaspoons of baking soda
- powder sugar for decoration if wanted
Method
- Mash the dates or the apricots into a paste. The apricots may be more difficult so it may be helpful to use a hand blender.
- Melt the butter.
- Whip the eggs together in a bowl.
- Mix the eggs, the dates (or the apricots) and the butter together.
- Add the flour and the baking soda.
- Mash the bananas with a fork and pour mixture into a greased loaf pan.
- Bake the bread in 175 C for about 35-40 minutes.
I always keep this banana bread frozen in slices, which makes it easy to add one or two slices of it to my son’s lunch bag. I am happy with the fact that it is nutritious while at the same time being a bit of a ‘sweet-treat’.
